FDNY LPG (propane) permit for a food truck + G-23 Certificate of Fitness: New York City restaurant guide
FDNY
What it is
If your truck cooks on propane, FDNY requires a Liquefied Petroleum Gas permit for the mobile unit and a G-23 Certificate of Fitness held by the person using LPG for mobile cooking.
When a restaurant needs it
Any food truck or cart that stores, handles or uses LPG (permit required above 400 standard cubic feet, about 47 lbs; FDNY lists mobile food carts and trucks explicitly).
How to apply
Get the G-23 Certificate of Fitness (written exam, $25, valid 3 years), then apply for the LPG permit for the mobile unit showing the COF, current motor-vehicle inspection stickers, hazard signs, a 20:B-C fire extinguisher and secured tanks.
Documents you’ll need
- G-23 Certificate of Fitness
- Vehicle inspection stickers
- DOT verification if the truck is over 10,000 lbs
- Photos of tank mounting and hazard signage
- Fire extinguisher (20:B-C minimum)
Good to know
Propane storage at your commissary is regulated separately (FDNY guidance on LPG at food cart/truck commissaries). The COF is issued to one person, so each shift needs a holder on the truck.
