Commercial Kitchen Hood & Fire Suppression System: Nashville restaurant guide
Metro Codes (mechanical) + Fire Marshal's Office (suppression)
What it is
Type I grease hood and exhaust are permitted as kitchen hood work on the building and mechanical permits. The wet-chemical suppression system is reviewed and acceptance-tested by the Fire Marshal.
When a restaurant needs it
Any cooking that produces grease-laden vapors (fryers, griddles, ranges, charbroilers).
How to apply
Show the hood on the building/mechanical plans. The suppression contractor submits system shop drawings for Fire Marshal review and schedules the acceptance test.
Documents you’ll need
- Hood/exhaust shop drawings
- Suppression system design and calculations
- Equipment schedule under the hood
Good to know
Kitchen hood work is specifically listed as needing a commercial renovation permit, even in a former restaurant.
