Commissary agreement for a mobile food facility: Los Angeles restaurant guide
LA County Public Health — Mobile Food Program
What it is
State law requires every mobile food facility to operate from an approved commissary (a permitted food facility where the unit is stored, cleaned, stocked and filled with potable water). Your own permitted restaurant can serve as the commissary only if it holds the County's commissary permit category.
When a restaurant needs it
Operating any food truck or cart.
How to apply
Rent space from a County-permitted commissary and keep the written agreement with the truck; or ask the Plan Check Unit ((626) 430-5560) for a site evaluation to permit your restaurant as a commissary.
Documents you’ll need
- Signed commissary agreement
- Commissary's Public Health Permit number
- Alternate storage location if serviced by a Mobile Support Unit
Good to know
The City's mobile vending starter kit: "California law requires that all mobile food vendors rent space from a food facility, known as a commissary, to park your vehicle when not in use."
